The Saba said that, at the ‘Havdalah’ connection that we do after Shabbat is over, we bless the Myrtle branch that has three leaves. They come out from the same point on the branch and represent the three patriarchs, the three columns and the three levels of additional parts of the souls that we receive on Shabbat, Nefesh, Ruach and Neshama.

(The Saba, meaning ‘elder’, is not mentioned by actual name but the Zohar usually uses ‘Saba’ to refer to a special high soul that comes from the Garden of Eden to support Rabbi Shimon in his studies.)
The verse in Song of Songs 2:5 says “סַמְּכוּנִי,בָּאֲשִׁישׁוֹת–רַפְּדוּנִי, בַּתַּפּוּחִים: כִּי-חוֹלַת אַהֲבָה, אָנִי ”
“’Support me with dainties (אֲשִׁישׁוֹת, ‘fires’) , refresh me with apples; for I am love-sick.’ ” so what is the connection between the apples to the Havdalah.

The Saba refers to verse in 7:9 “וְרֵיחַ אַפֵּךְ כַּתַּפּוּחִים” “and the smell of thy nose like apples” and explains that the secret is related to the scent that comes to the two nostrils. In the process of Creation the light that brought life to Zeir Anpin and Adam, came through the ‘nostrils’ of Arich Anpin. (detailed explanation in another time)

Genesis 2:7 “וַיִּפַּח בְּאַפָּיו, נִשְׁמַת חַיִּים; וַיְהִי הָאָדָם, לְנֶפֶשׁ חַיָּה”
“and breathed into his nostrils the breath of life; and man became a living soul.”

The apples represent the fruits of the Light as it appears in Malchut.
When we make a blessiing on any pleasant scent, we connect to the aspect of life that God brought down to the world, especially after Shabbat, when we still have the extra souls that we connected to with our spiritual connections and meditations.

Three meals on Shabbat are also important connections and must be elevated with Zohar reading. Don’t leave the table before reading some Zohar. The Holy Ari wrote special songs for the three meals that elevate the transformation of food into spiritual light. In the words of the songs he uses the symbols of apples and connects us to Keter with Arich Anpin and Atika Kadisha.

When we read Zohar on Saturday afternoon, we reach the highest level of spiritual connection and we gain all the soul levels of Shabbat.
