The Persimmon אפרסמון (not exactly the same fruit with this name) had a special scent that connects to the level of Binah. The Zohar express the different levels of Light that come from Binah and the mountains of persimmon. Sometimes the Zohar says rivers of Persimmon, referring to the flow of light from Binah. The mountain represents a high level of Light that spreads the scent of the pure Persimmon. sometimes the Zohar refers to 12, 13, 18, 49 mountains/scents or Persimmons, depending on the Light that is referred to from Binah.
